We carefully verify and control the various stages of the vinification process which all contribute to giving the wine its character and authenticity. This includes:
- Sorting the harvested grapes on the plot
- Pressing
- A lengthy fermentation
This is followed by the most delicate part of the process, for which Domaine MOLTES (just like any artist) displays a high degree of sensitivity and a perfect feel for the effects of time on the development of the wines in order to achieve complete harmony between the various grape varieties.
The harvest is a very special moment indeed. Its timing is critical. We pay particular attention to the harvesting of each of our plots, which is carried out when the balance and maturity of the grapes are considered optimal. The fruit is picked by hand and then taken speedily to the pneumatic press where it undergoes gentle pressing. The alcoholic fermentation process is carried out in our tanks and is subject to precise temperature control. After undergoing ageing for several months on fine lees, the wines are bottled and stored in our cellars under ideal storage conditions. These wines are only proposed for sale when we consider that they fully express their taste and flavour.
