The Crémant draws its success from the scrupulous respect of the various manufacturing steps derived from the traditional champagne method; this method requires a second fermentation in the bottle and aging on the lees for at least a year. Late harvest wines are a specialty from Domaine Moltes and are made from over ripe grapes harvested way after the classic harvest times. The “noble” rot already happening on the grapes gives them a much longer aging ability. They are part of the “elite” of French sweet wines.
